Bring Them
Back to Life
Dried mushrooms will keep for months when sealed in a container
and kept at room temperature. To reconstitute, soak
the mushrooms in warm water for 20-30 minutes.
Strain them through a sieve to remove any sand or dirt.
RolandFood.com,
a specialty food site, offers the following tips on how to
use dried mushrooms:
Mushroom Cream Sauce
Grind dried mushrooms into a coarse powder in a small mill
or food processor. Add to your favorite cream sauce.
Let steep for 3-4 minutes in sauce for a full flavor.
Serve over wild mushroom ravioli and top with freshly chopped
parsley. Garnish rim of plate or bowl with mushroom
powder.
OR
Reconstitute 1 oz. dried mushrooms in 2 cups hot water. Chop
the mushrooms into large pieces. Strain and reduce the
liquid to ¼ cup. Add the reduced liquid and mushroom pieces
to your favorite cream sauce. Serve over fettuccini with grilled
asparagus and roasted garlic.
