AP4 Internship Program
Carondelet /St. Marys Hospital and TUSD Food
Services
The Food Services curriculum site provides didactic and experiential
activities specifically derived from the outcome competencies and specific
objectives of the AP4 program. An AP4 program is a program approved by the
Council on Accreditation of The American Dietetic Association. The AP4 is
a graduate level curriculum providing for the required outcome
competencies necessary to successfully complete a comprehensive
examination used nationally as the final qualifying step to become
certified as a Registered Dietitian.
The benefits of participation as a curriculum site are shared among the
sponsoring facility, the curriculum site, the program participants, and
the site faculty. Some of those benefits are identified in the following
statements. Site faculty has the stimulus to remain current in their
knowledge and sharp in their staff development and teaching skills.
Program participants benefit from the contact with may role models within
the professions. TUSD benefits from the projects the program participants
are able to complete for the Food Services Department. The sponsor
benefits from the network established with other agencies and the ability
to provide the program participants with a broad scope of experiences
within the clinical, community and management aspects of the profession of
Dietetics.
TUSD Food Services & University Medical Center

UMC and TUSD Food Services Department have teamed up to offer a project
driven section of UMC's dietetic internship program. Students start the
weeklong program by meeting with the Food Service Department Director
regarding their focus project. Students compile various assignments as
they travel to several school sites, meet with menu planners, nutrition
coordinators, production staff, distribution, inventory, purchasing,
program development, summer meals program, and federal meals program
office.
